TAGLIATELLE AL PESTO E GAMBERI
This dish is perfect for a quick yet elegant and delicious summer supper.
Preparation time 5 minutes. Cooking time approx. 7 minutes (depends on brand of pasta chosen)
Ingredients for 2 people: 250 grams of egg tagliatelle, 15-20 tiger prawns, 3 tbsp. home-made pesto*, 2 fresh tomatoes, 1 clove of garlic, olive oil to taste and fresh chilli.
Bring a large pan to boil while you prep all your ingredients. As soon as the water is boiling add a small handful of salt to the water and then throw in the tagliatelle. While the pasta is cooking, quickly sautee the garlic with the fresh chilli in some olive oil for a couple of minutes ensuring it does not turn brown. As soon as the garlic has turned to gold, add the chopped fresh tomatoes and the tiger prawns and season to taste.
As soon as pasta is ready, drain the water and mix the prawns sauce in with the tagliatelle. Add the fresh pesto, stir and serve on a plate with some flat leaf parsley or basil leaves as garnish.
And voila’ … Summer Supper is served!
