Recipe – Parmigiana di Melanzane
Ingredients for the PERFECTParmigiana:
- extra virgin olive oil
- salt and pepper
Slice the aubergines, add salt and put them in a colander with a plate and a weight on top of it, to set for half an hour – they will release some of the water they contain. Once drained, pat them dry with kitchen paper, cover with flour and fry the slices.
In an oven dish, lay two table spoons of tomato sauce, and start layering your fried aubergine slices with grated parmesan cheese, salt, mozzarella basil leaves in between each layer, cover with more tomato sauce.
Finish the last layer with mozzarella and parmesan, a sprinkle of pepper and it’s ready to go in the oven for 25mins at 190°C.
