Preparation time: 10 minutes + 30 minutes resting time
Ingredients for 2 people: 4 large king prawns, a red pepper, some mixed olives, garlic crostini.
For the batter: 75 gr flour , 150cl of soda water, a pinch of salt and some fresh ground black pepper.
For the tomato salsa: fresh tomatoes , 1 small fresh chilly , 1 small half cloves of garlic , 1 small roast red pepper, peeled and seeded.
Plus oil for deep frying and mix baby leaves for garnish
Preparation :
Remove seeds from the red pepper and roast in some olive oil in a very hot oven until soft. Remove skin and set aside.
Whisk together the soda water and the flour with the seasoning till you reach a dense yet smooth consistency, and refrigerate for half hour to rest .
Scold the tomato in boiling water for 5 minutes , drain and remove the skin. When the tomatoes have cooled down, blend them with the roast pepper the garlic , the chilli salt and pepper to taste and a little extra virgin olive oil .
Peel the king prawns and drop them in the batter to cover them evenly and thoroughly.
Deep fry the king prawns at temperature of 180 degrees for about 3 to 5 minutes till are golden and brown. In the mean time, dress a martini glass with the mix leaves rest the king prawns on the top and finish by adding a dollop of the tomato salsa .
You can present this dish like in the picture with some garlic crostini and some olives served in half a red pepper.
