Who does not like warm fresh-out-of-the-oven apple tart?
Possibly one of the most basic cakes to make due to the accessibility of the ingredients yet one of the tastiest treats!
Here is our own chef’s version of a classic recipe!
For the pastry: 200 gr plain flour, 100gr cold butter, 50gr icing sugar, 2 egg yolks
For the custard: 2 egg yolks and 1 whole egg, 35gr potato flour, 35gr plain flour, 160gr caster sugar, 500ml whole milk, vanilla essence
For the filling: 2 apples, 1 lemon, sugar
Rub all the ingredients to make the pastry together then keep in the fridge for an hour.
To make the custard, mix sugar and flour together with a few drops of vanilla essence. Add the eggs and whisk together. Add milk and place on low heat, whisking til the sauce cream thickens. Leave to cool down.
Slice the apples, drizzle lemon juice over them and then sprinkle with sugar.
Stretch the pastry over a tin and pour the cream within.
Lay the apple slices on top covering the whole surface (do not leave any gaps). Drizzle some more lemon juice then place in a hot oven at 180° for 40 minutes.
Sprinkle with icing sugar and… voila’! Simplicity and perfection are served!
